Cauliflower 'Romanesco'
Brassica oleracea var. botrytis
Centuries-old variety from Italy, producing beautifully sculptural lime-green heads that are crisp and tasty. Firmer texture and nuttier delicate flavour when compared to a traditional cauliflower. Once the main head has been harvested, leave stem to produce further smaller heads.

Harvest
Sowing & growing
Sow January-July (Jan-Feb sowings under cover) to provide a succession of heads. Sow seeds 1cm deep into modules and transfer to final position when large enough roughly six weeks later. Harden-off those grown under cover before planting out 60cm between plants and 60-80cm between rows. Overwinter Sep-Oct sowings in a coldframe.
Aftercare
Keep well watered to prevent bolting. When harvesting, use fresh or blanch and freeze.
